9-Day Menu, No Ice Needed!


DSCN8857Here is a 9-day menu that I put together for another Upper Amazon (Rio Marañon) river trip. I hope it inspires you to come up with some ideas of your own. Check it out:

B: Fresh Fruit, Peaches, Yogurt, Granola and Cereal, milk, energy bars

L: Tuna Sandwich + PBJ/Nutella, Chips, cookies

D: Appetizer: Guacamole & Corn Tortilla Chips

Main Course: Vegetarian Burrito Bar

Served with: Beans, Rice, Salsa

Vegetable: Lettuce, Tomato, Onion

Dessert: Danish Tin Cookies

 

B: Breakfast Hash, Fruit

L: Tuna Sandwich + PBJ/Nutella, Chips, cookies

D: Appetizer: Cheese, Crackers, Olives

Main Course: Spaghetti with Marinara Sauce

Served with: Garlic Bread

Vegetable: Soft Veggie Stir Fry

Dessert: Key Lime Dessert de Veracruz

 

B: Cereals & Granola, milk, peaches

L: Traditional Trail Lunch: crackers, cheese [hard cheeses/mozzarella], sardines, salami, PB, Nutella, GORP, Pringles, Chips, Pickles, Cookies

D: Appetizer: Soup

Main Course: Sloppy Joe´s

Served with: Mashed Potato

Vegetable: Corn

Dessert: Sublime chocolate bars

 

B: Deseyuno de Los Incas, Fresh Fruit
L: Aztec Tostadas

D: Appetizer: Peruvian Snack Mix, Pistachios

Main Course: Red Coconut Curry Stir Fry or Chop Sui (if find a lot of veggies in Balsas)

Served with: Rice

Dessert: Peach Pound Cake

 

B: Breakfast Burritos

L: Chines Chicken Salad (can be some vegetarian portions set aside)

D: Appetizer: Vegetarian 5 Spice Oriental Soup

Main Course: Peruvian CauCau served over Fried Potato,

Served with: Easy Lentils, Fried Pepperoni

Dessert: Cookies or DO dessert

 

B: Quinoa de Canela, milk

L: Pasta salad, on side: pepperoni, rajas, parmesan cheese on side

D: Appetizer: Peruvian Snack Mix, Pistachios

Main Course: Peruvian Arroz Chaufa, Crema de Zapallo

Vegetable: Fried Platano

Dessert: Hot Cocoa

Served with: Rice

Vegetable: Papas Crema de Ahi, Fried Platanos

Dessert: Hot Cocoa

L: Chinese Chicken Salad

D: Appetizer: Crackers, Sardines, Oysters

Main Course: Corn Chowder Dinner

Served with: Garlic Bread
