We live on a small, private sailboat cruising the South Pacific, where many of our usual recipe ingredients are in short supply or a long distance away. So, I need to have food stored for long periods of time. My refrigeration space is extremely limited, and I never know when we may need to turn the fridge off completely to conserve power. Similarly, we have only a limited amount of propane on board, and sometimes the sea state makes it dangerous to cook on a stove. Lacey’s cookbooks are perfect for these situations, and even better in the Kindle edition because they don’t take up precious space or weight. Our absolute favorite recipe that we added to our repertoire during our sailing adventures has been the spring rolls out of the “no fridge no cooking” cookbook. It is absolutely fantastic! We can’t eat enough of them, and I have served them as appetizers to guests as well and they can’t stop eating them either! It is a great recipe because the only fresh ingredients are things that last forever such as cabbage, carrots and onions (I usually skip the green peppers as I rarely can find them in the South Pacific). Even if I haven’t been to the grocery store in a while, I usually have cabbage, carrots and onions on hand. And all the rest of the ingredients, I have in my regular, unrefrigerated staples. The spring roll wrappers last for years as long as I can keep them flat and dry. So when I want to make something special but haven’t had access to a store, I just whip out this recipe and I am crowned wizard of the day. Sometimes for an added treat, I fry them, but they are delicious and healthier just as prescribed. I tell everyone who asks, where I got the recipe. Lacey, you are famous!
