Fast Blueberry Quinoa


Quinoa Flakes cook so fast! This breakfast quinoa is great with a variety of toppings, such as: honey, maple syrup, fresh fruit, raisins, nuts, granola, chia seeds, etc. Also very good with alternative milks; I particularly like coconut milk.

4 Servings

1 ½ cups quinoa flakes* —– LINK to BUY ON AMAZON

6 cups water

1 cup powdered milk (NIDO) —– LINK to BUY ON AMAZON

2 ¼ cups freeze-dried blueberries —– LINK to BUY ON AMAZON

3 tablespoons of sugar or another sweetener

Pinch of salt

In saucepan set on medium heat bring the water and dried blueberries to a boil and turn off immediately (do not cook blueberries too long they will disintegrate).

Remove water and blueberries from the flame and add the quinoa flakes, powdered milk sugar and salt. Give the cereal a stir. Let cereal sit for 3 minutes.

Give a final stir, serve and add toppings.

*Quinoa flakes are made by Ancient Harvest; you can find this brand in some markets and online.
