12-days of meals! Listed below is the partial menu from a 28-day Upper Amazon river expedition, June, 2015 (Rio Marañon). Keep reading to discover 12 days worth of camp food! Includes: breakfasts, lunches, appetizers, main dinner meals, salads, sides, and desserts. True, all this food was bought in Peru, but I think it will give you some ideas for your next river camp kitchen – or any kitchen for that matter. Check it out:

Day 1:

B: Deseyuno de Los Incas (super healthy – quinoa, amaranth, chia…), Fresh Fruit

L: Restaurant in Chagual, at the bottom of the Rio Marañon river valley!

D: Appetizer: Guacamole & Corn Tortilla Chips

Main Course: Marañon Burritos (bean for vegetarians)

Served with: Refried Beans, Rice, Salsa

Vegetable: Lettuce, Tomato, Avocado

Dessert: Nutella Treats de Mulatos

Day 2:

B: Fresh Fruit, yogurt, Hard-boiled Eggs, Pan Dulce

L: Cold Cuts Sandwiches + PBJ/Nutella, Chips, Cookies

D: Appetizer: Chips and Salsa

Main Course: Salmon Steaks

Served with: Cowboy Potatoes

Vegetable: Green Salad with dressing or Carrot Quinoa

Dessert: Hot Cocoa

Day 3:

B: Potato Hash, Chorizo, Eggs

L: Cold Cut Sandwich Lunch+ PBJ/Nutella, Chips, Cookies

D: Appetizer: Cheese, Crackers, Olives

Main Course: Spaghetti with Marinara Sauce

Served with: Garlic Bread

Vegetable: Soft Veggie Stir Fry

Dessert: Key Lime Dessert de Veracruz

Day 4: June 28

B: Deseyuno de Los Incas (super healthy – quinoa, amaranth, chia…), Fresh Fruit

L: Tuna Sandwich + PBJ/Nutella, Chips, cookies

D: Appetizer:  Salsa & Corn Chips

Main Course: Vegetarian Burritos

Served with: Peruvian Rice, Meat, Cheese, Beans

Vegetable: Tomato, Romaine Lettuce

Dessert: Hot Chocolate

Day 5:

B: Fresh Fruit, yogurt, Cereals & Granola, milk

L: Traditional Trail Lunch: crackers, cheese [hard cheeses/mozzarella], sardines, salami, PB, GORP, Pringles, Chips, Pickles, Cookies

D: Appetizer: Soup

Main Course: Sloppy Joe´s

Served with: Instant Mashed Potatoes

Vegetable: Canned Corn

Dessert: Home-made Puddin Pie

Day 6:

B: Banana Pancakes, honey, jam, syrup

L: restaurant in Balsas

D: Appetizer: Crackers, Sardines, Oysters

Main Course: Corn Chowder Dinner

Served with: Rolls from Balsas

Vegetable: Black Bean Salad

Dessert: Sublime Chocolate Bars    

Day 7:

B: Cereal, milk, fresh fruit from Balsas or canned peaches

L: Aztec Tostadas

D: Appetizer: Fried Yuca

Main Course: Chop Sui de Maria

Served with: Rice

Dessert: Peach Pound Cake

Day 8:

B: Breakfast Rice, Fresh fruit if were able to get in Balsas

L: Asian Couscous

D: Appetizer: Sardines, Crackers, Cheese

Main Course: Dreamy Sauce Tortellini

Served with: Garlic Bread (hot dog buns work well)

Vegetable: Soft Veggie Stir Fry(mushrooms, onions, squash, eggplant)

Dessert: Peruvian Chocolate

Day 9:

B: Chorizo and Eggs, Pan Dulce, Fresh Fruit or Canned Peaches

L: Egg Salad Sandwich + PBJ/Nutella, Chips, cookies and Chinese Chicken Salad

D: Appetizer: Vegetarian 5 Spice Oriental Soup

Main Course: Peruvian CauCau served over Fried Potatoes

Served with: Lentil Stew, Fried Pepperoni

Dessert: Key Lime Dessert de Veracruz

Day 10:

B: Quinoa de Canela, milk

L: Pasta salad with pepperoni, rajas, parmesan cheese on side

D: Appetizer: Peruvian Snack Mix, Pistachios

Main Course: Peruvian Arroz Chaufa and Crema de Zapallo

Vegetable: Fried Yuca

Dessert: Key Lime Pie de Veracruz

Day 11:

B: Oatmeal, Milk, raisins, sweeteners

L: Hummus Tortilla Rolls, Tabouleh, Olives, Dried Fruit, Cookies

D: Appetizer: Popcorn

Main Course: Oriental Stir Fry

Served with: Rice, Easy Lentils

Vegetable: Marañon Slaw

Dessert: Danish Cookie in Tin

Day 12:

B: Cereals, milk, canned peaches

L: Traditional Trail Lunch: crackers, queso de Australia, jerky, sardines, oyster, PB, GORP, Pringles, Chips, Pickles, Cookies

D: Appetizer: Peruvian Snack Mix, Pistachios

Main Course: Rio Choclo Fish Stew

Served with: Rice

Vegetable: Papas Crema de Ahi and Fried Platanos

Dessert: Hot Cocoa

I just finished 16 days on the Upper Amazon and we did not use any ice – period. It was fantastic.
